Karen Brown cooks dinner

Karen is a friend of Mikes for many years and a friend of mine. She called and wanted to cook dinner for Mike so last night she came over. She brought healthy stuff for Mike, Alex and I and got started whipping up a great meal. Alex was the sous chef. The meal consisted of swiss chard, acorn squash, baby potatoes with parsley, jumbo shrimp (butterfly style and sautéed in a pan with garlic and a bit of olive oil and butter. An amazing salad with tasty olives and cheese.  It was real fresh and Mike loved it.  I am learning to cook better so it was a great lesson in good cooking!

After we went to Pink Berry and Karen tried it for the first time. Mike rested at home as he cannot eat sweet stuff. But he was happy from the dinner, resting and watching an NBA playoff game.

Kidney Facts: When you have kidney failure you need to eat low protein meals and after transplant you need to eat higher protein meals.  Also more water before transplant and less after. Also, you cannot eat tropical fruit after transplant....forever!
